Why do different instruments have different music sheets?

ive noticed that every music sheet has an instrument on top for what instrument can play it. Are the notes supposed to be different? I have been playing tenor sax for a few months now. Can i play a music sheet that is meant for alto sax or trumpet for example? How about piano?
